It has an aged smell similar to the Tsuki no I we met before, but this one is softer and easier to drink.
The Honjozo sake has a nice, refreshing mouthfeel.
The first sip gives the impression of sake, but from the second sip, it becomes familiar to the palate and gives a moderate impression.
Perhaps it is because the honjozo is less cloying and more to my liking when it comes to matured aromas.
The stewed eggplant goes perfectly with the sake.
