Founded in 1913, Tomikawa Shuzo Brewery brews "Chuai Unfiltered Nama-zake," a bottle of sake that embodies the brewery's philosophy: "Local sake is local food culture.
The brewery uses limpid brewing water from the Shoninzawa spring system, selected as one of the 100 best waters in Japan, and locally grown sake rice that the brewery itself cultivates.
The sake is unpasteurized, without any filtration or heating, so the vitality and fermentation of the rice can be felt as it is.
