Tokaido Sake Brewery Tour in Spring (1)
I joined this tour with Mr. Kyukura and Ms. Nemuchi!
We met at Moriyama Station and were driven by Kyukura-san's wife to visit each brewery.
The first brewery was Fujimoto Sake Brewery, which joined the tour for the first time.

We drank
Mizuikyo Kugo-gou Junmai Nama-zake
It tasted as good as the one we drank at home. Rare cheesecake 😋.
Koji-mashimashi-gou Junmai Nama-nihonshu
Yamada Nishiki. It has a strong sweet taste and a thick flavor. I wondered if I should buy it, but I could still buy it at a liquor store even if I didn't buy it here, so I didn't this time.
KT-901 Junmai Namaisake
Yamada-nishiki. It uses a yeast that produces a lot of succinic acid and malic acid. It was not so sweet but tasted delicious with a strong umami flavor. I could understand why they call it "dashi" 🤣.
Harusame Junmai Ginjo Hitohi
Ginbuki. Unlike the first three, it has a modern, up-to-date feel.
It was fire-aged, but it was fresh, sweet, and delicious!
Aw Aw Aw Aw Junmai Nama Nama Sake
Sake made by the brewer, Mr. Hatada. It is made from Yamada Nishiki. It is extremely sweet and sour.
The sourness is more assertive than the sweetness.
Rin Junmai Namaigahara
Nihonbare. This was also sweet, tasty, and easy to drink.
Very dry junmai namaeshu
Sake meter rating +20, Yamadanishiki. It is very hot and has no sweetness at all. It is neither light nor fruity, so it is a little bitter...
