Tonight is Shinsei's Nirvana tortoise. It is low-pasteurized and yeast-free. ❓🤔 But Shinsei also basically uses Kyokai No.6 yeast, so they want to make a difference when they don't use cultured yeast ❓ I don't know anything about brewing, and anything is fine if it tastes good, but I am curious about something.
So, Nirvana tortoise. The acidity is low for a Shinsei. Maybe because of that, the sweetness stands out and it feels heavy for its strength. I remember that the Nirvana Kame which I drank before was lighter 🤔 Maybe it is the difference of the lot.
