The luxury of being the first to taste the freshness of Junmai Daiginjo "Nouveau (new sake)". A sake to celebrate a good harvest and a good brewing of sake. Junmai Daiginjyo is originally brewed during the harsh winter months, but for "Bountiful Harvest Thanksgiving" Junmai Daiginjo Nouveau (Shinshu), we challenged ourselves to brew the best sake in time for the November 23 ban by using freshly harvested rice as the raw material and preparing it in October to take full advantage of our craftsmen's skills.
