This will be a comment from an amateur drinker. Today I enjoyed sakes like a student standing in the hallway at Standing Place in Ningyocho lol.
Even Yamamoto had a different character from the No. 6 yeast. I know it is a dry sake, but I was surprised that the difference in yeast made such a difference in the taste of the sake. I am thankful that I can drink good sake today, and I am amazed at the new discoveries I make. It made me realize that sake and people are both once-in-a-lifetime experiences.
