I received this as a return gift from Nishiwaki City, Hyogo Prefecture, which is a 2020 hometown tax payment. The rice is polished to 40%, but the complex acidity from the micro-fermentation in the bottle makes it a very unique and wonderful bottle. It is said to be like sake but not like sake. Certainly, the core strength that cannot be expressed only by fruity is impressive. It is a good sake.
