This is probably the first time I've ever had freshly squeezed raw ginjo sake! The nose is subtle, with a sweet aroma of rice and a little herbal 🌿. Fresh, apple-like fruitiness, a little bit of cemedine 🍏. It has a long, astringent, spicy aftertaste with a long finish. I guess my memory of it as a clean and clear ginjo was wrong... It's more like a massive chugin, which is a precursor to the special honjozo we had last year ✨. And as is often the case with Isoboast... The flavor doesn't settle down right after opening the bottle, and it doesn't really show its true potential until about the 3rd day ❔.
