We had an unreleased 2 year old aged sake warmed up and it was very easy to drink and delicious! Just the right amount of gorgeousness and mellowness.
They use rice from the brewery's production area and ship it without blending. The milling ratio is 70%, I believe, and the rice is melted down all the way to the end so the umami can be fully appreciated.
The name of the rice grower is written on the label, and the brewer's passion for the rice was very evident in his passionate talk!
I would love to buy sakekasu (sake lees) if they sell it, and I would like to support them!
