Comparison of Tolatan Hiyoroshi and Hiyoroshi. The regular sake, made with non-standard "Yamada-Nishiki" grown by the volunteer farmer "Tolatan Village," is a junmai-style sake with a refreshingly dry taste.
The hiyaoroshi is a junmai sake that is gentle and light on the palate with plenty of rice flavor, which we prefer.
The restaurant is in the style of an old private house and serves handmade fermented foods and obanzai. The oden with soup stock (dashimaki tamago, shabu shabu shabu, lettuce, and konnyaku) served as a side dish is delicious.
