For our first commemorative post, we decided to go with "Kunitatsuru" Junmai Daiginjo from Noguchi Shuzo.
It is a sake that has been revived after an absence of about 40 years.
A slightly fizzy feeling when opened.
In the mouth, there was a slight fizziness and acidity, and although it is a Junmai Daiginjo, the aroma was not so pronounced, making it refreshing and easy to drink.
Even when served with fatty sashimi, one sip refreshed the palate.
Next time, I would like to try junmai sake.
