Kuririn Junmai Kanazawa Nishine Namaishu. Also known as cream.
This is the first time I have had the opportunity to taste this brand name, Ritsurin, which is a limited brand launched by the Kuririn Shuzo Brewery, known for Haruka, together with volunteer sake dealers, in order to deepen and clarify the terroir of the brewery (Misato Nishiki, storehouse yeast, and Rokugo water). The Misato Town Kanazawa-Nishine area is located in the center of the Sendai Plain, and the Misato Nishiki grown by Misato Sun Farm, a group of veteran farmers, is the source of Kuribayashi Kanazawa-Nishine.
The mild sweetness and umami of Misato Nishiki spreads on the palate and finishes with a refreshing acidity.
