Junmai Daiginjo-shu with a rice polishing ratio of 50
Kake rice is 80% Omachi. Koji rice is Yamadanishiki. The label states that the sake is "tamba-kumi-kumi," which means that it is bottled as it is freshly pressed, and then heated through the bottle before being bottled. At 13% alcohol by volume, it is a low-alcohol sake of today.
When poured into a glass, it has a pleasant aroma of sweet, mellow fruit, like yellow peaches. The taste is fresh and light with a sweet umami flavor. The acidity and bitterness in the aftertaste are also pleasant...and the gasiness is refreshing.
It is also delicious!
