Japanese white pine (Pinus parviflora)
It was somewhat classical compared to the Eikoufuji that I usually drink.
The name comes from the fact that the character for "Eiko" was added to the original sake name "Fuji" when the brewery was first founded to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.
