This will be a comment from an amateur sake lover. Today I visited the Tsukii Sake Brewery in Oarai, Ibaraki. I was able to purchase some of the sake here. I also had the precious opportunity to talk with the master brewer. He gave us an in-depth talk about his philosophy of sake brewing and what Tsuki no I is all about. It was a great learning experience. I am grateful for the opportunity. Today, I also bought some anglerfish boiled in soy sauce and paired it with Oarai's wonderful sake! I have enjoyed drinking Hiko-ichi for a long time, but each time the taste matures, or rather, each time is a once-in-a-lifetime experience. I am thankful to be able to drink good sake today in good health.
