I wondered what would happen to Chosyu Brewery in the future after Mr. Fujioka left the company, but the previous lineup from Momoten was revived.
I opened the bottle with trepidation, wondering if there would be any change in flavor, but the Tenbi-ness of the past was still there, and it was a very tasty sake.
It had the creaminess and slight sparkle from the light nigori, yet still had the sweetness and umami that is typical of Amami, and I felt that the flavors created by Mr. Fujioka had been passed on.
I think the brewery will change after Mr. Fujioka's departure, but I would like to continue to support the brewery.
