When I went to a liquor store to purchase tickets for an upcoming sake meeting in my hometown, I was surprised to find a bottle of Shinmasa Cosmos on the shelf. Cosmos was the pioneer of getting into Shinsei. It was also reasonably priced. With so little on hand (now's your chance, right?), I bought it immediately.
We drank a glass of the wine at home with delight. The fruity, wine-like taste of the sake comes in like water, with a nice accent of the impurities of junmai sake, followed by the sweetness, and the sweetness of the No. 6 yeast is irresistible. As I taste it, the inside of the cup goes faster than the rest of the sake. Before you know it, half of the four-pack is gone. This is the cosmos of Shinmasa. I can't stop, I can't stop. I think it should be my personal No. 1 or No. 2. It is delicious. If you have a chance, please give it a try.
