When served hiya, it has a mild, umami taste of rice, followed by sourness, and a crisp aftertaste with a hint of bitterness. If you warm it up to lukewarm, the umami and sweetness of the rice will increase, which is a good thing! I have an image that most A-Sakura sake has a gentle taste of rice, and this one does not fit the image. This is the first time for me to drink Kame-no-o rice, but I like the taste of this rice, which has a good umami and a sharp taste derived from the acidity.
