The Sake Soshi series, released in 2021 as a limited edition sake to commemorate the 270th anniversary of the company's founding, has been renewed and reintroduced for the 2022 season! While the 2021 was made with miyamizu (miyamizu) as the brewing water and unfiltered, unfiltered, raw sake, the 2021 was made with miyamizu as the brewing water. In 2022, the brewing water is tap water from the upper reaches of the Sumiyoshi River, which is available only in Nishi-go, Mikage-go, and Uozaki-go of the five Nada Townships. It is then bottled fresh and fired only once. The taste is... The first touch is straight up amazeballs! The design of the bottle is heartbreaking in that it does not leave a lingering reverberation that interferes with the meal. Of course, even the ginjo brewing process is modest in its aroma to bring out the best in the ingredients. Even though the brewing water is changed, this sake is a so-called "ajiginjo" sake that faithfully follows the main character of Daikoku Masamune, that is, a sake for eating.
