3. Yamamoto's pounding. There were no Yongbottles available, so we had to settle for a bottle. As advertised, it has a strong acidity from malic acid and a light taste. It is not deep and has little umami, but it has a bitter aftertaste, which is refreshing and good as a chilled summer sake. 3300 yen, Nakazawa Sake Shop in Yachiyo.
