I was interested in this sake because I had not had much of an image of a sake made from a traditional sake yeast yeast yeast. I thought it would be sweet and aroma-centered, but it was a solid and sturdy type of sake. I should have checked the back paste, but it is a mature brewer's sake.
I think I prefer it cold.
It doesn't rise much when heated, but if it's cooled down, the umami will increase. But if it doesn't rise when heated, I'd rather drink it cold.
