Kaze no Mori is my favorite brand, and I also like Shinmasa.
I opened the bottle looking forward to it. The bottle was opened with a pop and a cheerful sound.
When I drank it, I felt the freshness of the unpasteurized sake, although I did not feel much of the shwashy fizziness I had expected when the bottle was opened.
It is soft on the palate and has Akitsuho's (?) aroma. It has an aroma of Akitsuho (?).
It also has a hint of acidity, making it a sweet and sour sake to my liking.
We enjoyed it very much.
