One of the strongest gassinesses of any home brewed sake I've ever had. The standing aroma is grapefruit citrusy but weak.
The balance between alcohol strength, umami, and sweetness is good, and it finishes dry in the aftertaste, so it is hard to feel the harshness that is commensurate with the alcohol content.
It is not overpowered by meat or well-seasoned dishes, and on the contrary, it did not go well with potatoes.
It is a good food sake, but it is also delicious on its own. I drank it cold to take advantage of the gasiness, but it would be interesting to drink it warmed.
