When opened, it has a slightly sweet and sour apple-like mouthfeel. As the temperature rises, there is a melon-like sweetness and a slightly astringent aftertaste, followed by a lingering sensation.
After about the third day, the acidity tapers off and the melon-like sweetness and umami come out, which is nice 😋.
