Takatsugu
Yamekoto Hajime" we have been following after coming across it this year. We opened the third bottle, brewed with 100% Gin-no-sato from Fukuoka Prefecture with a low alcohol content (13%).
It has a well-defined acidity and a beautiful umami flavor. Considering the low alcohol content, we were a little surprised by the strong impression of umami. The label says it goes well with "squid sashimi (salt or Kyushu's sweet soy sauce)," and it is a great food sake type that goes well with the stickiness of squid sashimi.
The next release will be after the new year, so this is a bottle you will want to keep an eye on. Not many sake stores seem to carry it, so if you come across it, please give it a try. Delicious: ‼️
