There was no bottle of Dewa Sanzan, unfiltered, so I bought a bottle of the fire-brewed version at the Kakinuma Kitasenju store. The fruity citrus flavor spreads in the mouth, followed by a crisp sweetness and a moderate acidity that passes through the nose, leaving a lingering bitter and cloying taste. It is light and easy to drink, so it goes down easy! As described by liquor stores, grapefruit is the closest analogy. If you like sweet and sour tastes and grapefruit tastes, especially bitter tastes, this may be for you. I personally prefer the unfiltered, unfiltered, unfiltered sake over the hi-ire sake, though of course the hi-ire sake is delicious as well.
