I just bought a bottle of Kaijin, so I'm going to drink it with sashimi!
The aroma is quite distinctive, with a sour, slightly fermented food-like aroma. The mouthfeel is very refreshing, but there is also a good amount of bitterness and a unique lingering aftertaste that reminds us of rice. I think it would be delicious warmed up. It has more acidity than I expected, which I think gives it a clearer flavor. It's delicious! It has a bit of a sake smell, so I would not recommend it to beginners, but if you eat Japanese food with sake, I would recommend this bottle. It does have a bit of an odor, but the bitterness isn't harsh at all, so I can recommend it to beginners on that score!
