Sake shops are all selling Shinsei by lottery. It is no longer sold even in a tie-in.
If you make it a lottery, the number of people in the lottery increases, so you can hardly buy it. It is a very precious sake.
It has a fruity taste like a lime derived from yeast No. 6, as is typical of Shinmasa. It also has a light flavor typical of Misato Nishiki. Therefore, even though it is a junmai daiginjo, it has a light and refreshing taste.
We are very impressed with Shinmasa's ability to brew a variety of flavors at a high level while using the same yeast.
I would like to have it again.
Thank you very much.
