The color is solid white with a cloudy component. Sparkling bubbles are also floating.
Fruity aroma like pears.
Fine bubbles and a slightly weak attack. Texture is hard.
The light effervescence is accompanied by a moderate sweetness and umami, and the bitterness that comes afterwards finishes it off crisply.
The thickening from the turbidity leaves a slight roughness in the throat at the end, giving a complex flavor.
Since this is a sparkling Otter, I thought it would be more light, so that even those who do not like sake could enjoy it, but I was wrong. The nigori gives it a bitter taste, so people who don't like sake may not like it.
But it is delicious. It was different from what I had imagined, but it is still easy to drink. It is delicious on its own, but its sharpness seems to allow it to be paired with a wide range of dishes, and I felt that it could be enjoyed in a variety of ways. I think it would go especially well with camembert.
