At a New Year's party with friends.
The brewer used a lot of spring water from the Kurobe River, one of the 100 best waters in Japan, and polished the Yamadanishiki rice to 35% for about 60 hours to make this sake.
It has a light taste with a slight bitterness in the aftertaste, probably due to the mineral-rich brewing water.
I thought it was good as a food sake because of its refreshing taste. I have a similar impression of aluzoe sake because it is so refreshing.
