Ingredients: Rice (domestic), rice malt (domestic) Rice polishing rate: 84%. Sake rice: 100% naturally grown Yamadanishiki Alcohol content: 16%. It is said to be an additive-free natural sake. It has a sour taste due to the action of microorganisms living in the brewery. It is not using lactic acid bacteria, but it has sour taste. That's about it. It doesn't taste like it has to be because it's additive-free. It's delicious! I'm a fan of Yamana Shuzo, and I wish the name of Yamana Shuzo was more widely known.
