I had no place to go since the memorable event was over, but I thought it would be a shame if I didn't drink it after summer had passed, so I took the plunge and had it on a day when nothing was going on...
To begin with, the fizz was too strong and it took 15 minutes to open the bottle. It takes a little effort to make a good wine, and the taste is all the more delicious because of it.
The color is a little yellowish. The aroma is more fruity than sake-like. The texture is like champagne. Rather than a grape-like feeling... I wonder what it is... (lol) In terms of aroma and taste, it also seems as if only the good parts of the rice have been carefully and beautifully extracted.
Despite the low alcohol content, there is no sweetness, but umami, and while there is no bitterness at all, there is something akin to an astringent taste, which gives it a rich aroma.
It is hard to tell because it is so shwashy, but it is a sake that has both a watery and astringent quality that is both tasty and astringent. I am very happy to be able to enjoy such a good sake! Thank you for the delicious sake!
