The nose has a hint of grape-like aroma.
When you drink it, there is a sweetness with some grape or pineapple-like fresh fruitiness, but the main axis is spiciness with a bit of bitterness, and it finishes with a crispness.
The initial fruitiness leaves a lasting impression, so it is not as dry as it could be.
On the second day, a little bit of umami and a mineral-like richness appear, which is a good change. It's a nice change, and after the 3rd day, it gets mellower (not like Ona? It is a good change.
I would say it is a mild modern food sake with Tochigi-style characteristics. The label says that you can feel more passion in this sake, and I wonder if this is reflected in the fruitiness and changes in flavor.
It would be more to my taste if it had a little more umami, but as a food wine, I feel that it can be used with both strong and light foods (Gouda cheese, salad, simmered vegetables, braised flounder are all OK), and I think it is highly complete.
