Rice type:Yamadanishiki 100%. Rice polishing ratio: Koji rice: 40%, Kake rice: 50 Alcohol content:16 degrees My first Toyo Bijin home brew😄. It seems to be a series called "mellow and single-minded". It's my first time, so I bought a Yamada Nishiki. The bottle was opened quietly. The aroma is elegant and fruity with a touch of glamour. It smells like melon and pear. When you put it in your mouth, the mellow but clear flavor and sweetness spreads. It is soft and beautiful with a refreshing acidity that blends in with the sweetness and flavor. The bitterness is not felt, and it fades away quickly. It is a brushed-up sake with no waste. It's a sake that everyone will find delicious. Sumikawa Toji was trained under Takagi Akito, the Toji of Jyushiro. I'm sure there are many brewers and toji who want to make this kind of sake. Well, there is a difference, so I'm looking forward to it. I drank a lot tonight too😄. It's delicious. Happy.
