The so-called Honjozo (Honjozo) distributed in the prefecture [Kenbonshu].

Kiyonishiki rice from Yamagata Prefecture is milled to 65%. Isoban is the only brewery in Japan that uses Kiyonishiki sake rice. Kiyonishiki is polished and used for koji rice and the first and second brewing stages of the three-stage brewing process, while Yamadanishiki from Hyogo Prefecture is used for tomezome (the third stage).
