When you put it in your mouth, it has an elegant sweetness and a slight aroma of red-fleshed melon, and then it is cut off by a strong acidity and bitterness.
There is a lot of umami and the bitter aftertaste makes it a mature sake that you will never get tired of drinking.
The bitterness that comes after the sweetness is like a melon, but the taste is very different from the melon taste of Jyushiyo.
There is no problem as a midday drink, and although it has a bitter taste, it also removes the taste of food.
No wonder some people compare it to white wine.
It must be a delicious sake, but the bitterness of the aftertaste was not to my liking.
After a few days, the bitterness settled down and it became a delicious sake with acidity, and I never got tired of drinking it.
