It's been a long time since I've been to Manjusen. The taste is stable and I am very satisfied with it again.
The flat polished rice is interesting.
Product Description
This is the first junmai ginjo brewed with shingin (flat polished rice)!
In the normal rice polishing process, long, thin rice is polished into a round shape, which sometimes removes much of the heart white (shinpaku) necessary for sake. However, in the flattened rice milling process, the rice is polished flat so that only the protein-rich surface is effectively removed, leaving more of the core white. Flat milling results in a round, soft, and mild flavor with less cloying taste.
