After more than 20 years, Otokoyama Shuzo Brewery in Aizu Misato has revived sake brewing with their first new sake "Wa" (raw sake). The rice used is Aizu's sake rice, Yume-no-Ko.
The eighth generation, the grandson of the deceased sixth generation, left the company and restarted sake brewing. This is a memorable first shipment of sake, and it has both the tenderness and flavor typical of Aizu. It will be interesting to see how the sake brewing evolves from now on!
