Purchased at Sake Sento Horiichi.
Mr. Tottei said that Omachi is the most popular among the Ni-Utsuri and expresses the Ni-Utsuri style the best.
They say it expresses two opposing tastes, and indeed, the taste is extremely difficult to describe!
The sweetness gradually gives way to a predominance of acidity, and the tongue is stimulated. At the same time, the taste of Omachi swells, and the lingering bitterness is pleasant.
The expression changes as the various tastes shift dazzlingly. This is a sake that seems to have all the charms of sake packed into one bottle.
As it approaches room temperature, the alcohol smell disappears and the complex flavors coalesce to create a sense of unity.
Delicious!
