I have been drinking sake for 38 years, and I have never had such a cosy sake. It has an unbelievable flavor and sharpness for a sake made with brewer's alcohol and 70% polished rice, and it doesn't linger even the next day.
Yamagata won first place in Japan in the New Sake Competition. Seven years ago, I heard a seminar by Mr. Koseki, a special advisor to the prefectural sake brewers' association, who said that Yamagata has been working on sake brewing by researching water, sake rice, and technology in cooperation with industry, academia, and government. This must be the result of steady efforts.
Having lived in Fukushima for 17 years, I am disappointed to have missed the 10 consecutive championships, but I will celebrate Yamagata's victory with sake, which I have enjoyed living there for 3 years 🥹.
