This is a new sake by female toji Mami Wakabayashi. It is a seasonal draft of the standard sake "Tsukiyoshi-no-Aka". This dry junmai sake is fermented to a sake strength of +10 and is characterized by its umami and sharpness. It has a more fragrant aroma than the hi-ire product, and because it is freshly pressed, the quality of the sake is young. It has a fresh, mild umami taste with a good outline.
