The mouthfeel has a solid weight and presence, as is typical of Tsuchida, but it also has a lightness to it, perhaps due to its 12% alcohol content. Thick but light. This contradiction is interesting!
The sourness and the savory & sweet flavor of the rice make it taste like a Shaoxing wine ✨.
It seems to go well with Chinese food as well, so much so that it seems a shame that I ate some bean-curd soup yesterday. It's not just sweet and crispy, but deep and you can feel Tsuchida's character 😌.
It is a versatile type of sake that can be served warm or cold.
The acidity and the lightness of the 12% alcohol content make it perfect for the hot weather we are having right now👍.
