Otter's new low-alcohol sake
Usually 13% is enough to call it low alcohol, but this Bisho is pressed at 11% and requires even more delicate management than the polished version.
The aroma is a bit on the light side, with a very well-balanced ginjo aroma.
Among the recent sakes I drank, it was close to Shinshu Kamerei.
The taste is very light at first!
The clear sweetness is combined with a soft acidity, and the overall taste is a bit thin in a bad way, but in a good way, it is very easy to drink.
And the relatively monotonous taste of Otters seems to be properly counteracted with rich flavors from apple and pear to grape and melon, so you won't get tired of drinking it!
Delicious!
It is said that they finally succeeded in commercializing this product after 20 years of challenge, and I think it is really a wonderful perfection.
I personally recommend this bottle of Otters!
