SAMURAIZ
We got some delicious-looking squid marinated in malted rice. Then, it must be sake, right? We ran out of sake in the refrigerator, so we rushed to the liquor store. I spotted it in a cold case and took it home with me.
Sake Mirai by Isshaku Suisei. I opened a bottle of screw cap.
The gasiness is subtle and slight.
It has a green banana and melon-like sweetness, and after a pleasant bitterness at the back of the tongue, it finishes cleanly. It is a beautiful sake with a future sake quality.
It is the best match for the koji-marinated squid served with the entrée. It also goes well with the pounded burdock that was served as a side dish for dinner. This sake goes well with everything.
I would like to try many kinds of sake brewed by Sake Mirai.
