We had it at Fukumotoya, a proper kakuchi-ya in Hiroshima.
The main sake here is junmai (pure rice).
We had it cold.
The aroma was subdued. The taste is...how should I say it? It is like a big, mature, and sure-fire big shot, coming in quickly at first, but not in a watery way, but more like a village A with a strong presence.
It's like, "Oh, this is different, isn't it? This is different from the usual. The sweetness and aroma that made me think, "This is different from the usual" spread in the mouth, and just before drinking, it bloomed discreetly and disappeared with the lingering aroma of rice.
It was an evening that left me deeply moved, as I could not remember ever having had a sake like this before.
It was another good sake today.
