The brewery is located in the town of Keihoku, about an hour's drive from the center of Kyoto, in the northern part of the city, weaving its way through the beautiful Kitayama cedar mountains.
Surrounded by lush forests, the town is centered on the clear waters of the Katsura River, and the rich nature, clean air, pure water, and severe cold of -10°C in winter are a great help in sake brewing.
The brewery is also located in a rice paddy field, where the brewery staff cultivates rice called "Shuku," which is the pride of Kyoto. The sake brewed from medium-hard water (130 degrees hardness) with high mineral content, different from that of the Fushimi area of Kyoto, is characterized by its exquisite acidity and fine, smooth, crisp taste.
It is the sake of choice for Kyoto cuisine professionals and is a favorite of Kyoto's high-class restaurants and ryokan (Japanese-style inns).
