Shinshu Kouetsu Tank is a project to purchase a tank from the sake brewery that won the award in the Shinshu Secret Sake Hanpukai, a program operated by three sake retailers in Nagano Prefecture, and brew a completely original sake. Honkin" won an award in the 2023 hanpukai. The brewery uses enzymes that easily produce aromas, resulting in a fruity and refreshing taste. It is fresh, lush, and has a good balance of sweet and sour.
