The junmai ginjo we had the other day had a very interesting flavor. This time, we were able to try their Junmai Daiginjo. The Junmai Ginjo was not at all harmonious in its sweetness, umami, acidity, bitterness, and alcohol, but overall it was delicious. I am looking forward to seeing what the Junmai Daiginjo will be like♪ Let's start drinking it right away.
The aroma is of melon, bamboo grass, and the deliciousness of rice.
The mouthfeel is sizzling. The carbonation lasts a long time! It stays on the tongue until the second half. The taste is bitter-sweet and sour. The aftertaste is sweet and bitter.
The bitterness is strong. It is characteristic and delicious. It is a sake to be paired with a meal rather than to be drunk by itself. The sweet and spicy flavor of the simmered belly is a perfect counterpoint to the sweetness and spiciness of the sauce, and they enhance each other's flavor. Yum!
If I were to use a Ghibli analogy, it would be Sophie at the beginning of "Howl's Moving Castle. The bitterness of the eldest daughter, who is carrying a lot of burdens, is very bitter. But she is cute.
