First of all, only the supernatant. It's very fresh and sour. It's like biting a group fruit.
Next, I mix it well. The sourness has weakened and the mellowness has increased. The sweetness is less and the sake feeling comes out well.
Regular Toyopai is easy to drink, but this one is very drinkable and has a strong sake feeling. It seems to go well with strong flavored food like nigori. This kind of change is also possible for Toyopai.
