It looks like summer is finally over. I heard that the hot weather will last until this week, so I have to open a summer bottle 😠.
I was attracted to something called "white koji brewing" and bought it out of curiosity. When I looked it up, I found out that white koji brews sourness. I wanted to try a white koji once since Niimasa is famous for it 🧐.

The acidity stands up, but it is not sweet. I've only had acid + sweet before, so it's a new taste for me 😋 The sake feeling comes afterwards. Easy to drink but not crazy light 🤔.
I'd like to open a sweet one next time since I'm out of rainfall.
The snacks were claypot meat and soba noodles from Watanabe Seimen, given to me by a relative.
